3-2-1 Snack Cake

I don't know if you can even call this a recipe, it's that easy.  (Disclaimer: I have not made this yet, but I have seen it and smelled it so I know it works.  Just haven't tasted it.  I will update when I do.)

I'd say this is the perfect kind of snack for the kids to make as it only uses a very few dishes; the mix and water and the microwave.  No HOT ovens.

Have fun with the ingredients and don't spare the Whipped Cream!

3-2-1 Snack Cake

1 box of angel food cake
1 box of any flavor regular cake mix

Combine dry mixes and store in an airtight container/jar.

To make snack cake:

Combine 3 Tb. of cake mix mixture and 2 Tb. water in a coffee cup.  Mix well with a fork.  Microwave  on high for 1 minute.  Let cool for 30 seconds and turn out onto a plate.  Top with Whipped Cream or Ice Cream and nuts or sprinkles or fruit and enjoy.

Crockpot Meat Loaf

An oldie, but a goodie from my recipe box.

2 eggs, beaten
3/4 c. milk
2/3 c. fine bread crumbs
2 Tb. minced onions
1 tsp salt
1/2 tsp sage
1-1/2 lbs ground beef

1/4 c. ketchup
1 tsp mustard
2 Tb. brown sugar
1/4 tsp nutmeg

Combine all the ingredients. Shape to fit crockpot. Cook on low, 5-6 hours.  Combine sauce ingredients and pour over meatloaf and cook on high, 15 mins. longer.

Smokehouse Chicken

Smokehouse Chicken
4 chicken breasts
seasoning for chicken
1 Tb. cooking oil
8 Tb. BBQ sauce
2 c. sharp Cheddar, shredded
8 slices bacon
1/3 c. green onion, sliced

Preheat oven to 450°.  Place bacon on rack on baking sheet and bake for 15 mins or until done.

Meanwhile, heat a skillet over m-h heat and add oil. While skillet is heating, prepare chicken. Cut each chicken breast in half and place each between 2 pieces of plastic wrap and pound out to an even thickness.  Sprinkle with seasoning. Fry each piece until done, turning over when first side is brown.

Place chicken in baking pan.  Place about 1 Tb of BBQ sauce on each piece and spread to coat.  Sprinkle 1/4 c. of cheese on each piece and then top with one slice of bacon.  Sprinkle with green onion.

Place in oven for about 10 mins until cheese is melted..
